If you want something delicious and nutritious for brekkie that even the kids will love then try this tasty treat. It's quick, easy and nutritious, packed with superfood goodness that will hold you until lunch and have the kids wanting more!
Chia & Brown Rice Pudding
1/2 cup brown rice
1/2 cup chia seeds
400ml coconut milk
1/2-3/4 cup of water
1tsp vanilla bean paste
1. Combine all ingredients in a saucepan cook on a low to medium heat for 60 mins adding extra water if needed.
2. Divide mixture into single serving jars or containers.
3. Place in refrigerator overnight.
4. Serve with fruit of your choice, mint, toasted coconut flakes and a squeeze of lime.
